We do use organic ingredients, but not exclusively. We partner with Charlie's Produce here in Seattle, who help source local as much as possible, and prioritize quality and freshness in their sourcing.
Since our menu is brand new each week, the exact amount of organic content varies week to week based on the menu and availability. Essentially, we prioritize using local ingredients, then organic as possible!
